BEHIND THE SCENES WITH Meta Newell West • A native Kansan, Meta Newell West grew up in Stafford. She fondly remembers her high school home economics teacher, who encouraged her to pursue a career in education at Kansas State University. After graduating from college, she moved to Abilene, where she taught home economics at Abilene High School for 33 years. Upon leaving the classroom, she became a catering manager at the historic Kirby House, a Victorian-era mansion turned restaurant and bed and breakfast. It was during this time that she drew on her culinary experience to write The Kirby House Cookbook, which traces the history of this historic home and dishes up more than 200 of the restaurant’s beloved recipes. She is now KANSAS! magazine’s go-to food and recipe freelance writer.
